Where do our beans come from?
On July 22nd, 1949, a ship sailed from Genoa, Italy to Brazil carrying hundreds of Italian immigrants who had survived WWII. Among them was Mario D’Alessandro, carrying with him a dream & a passion to begin a new life. After deciding to settle in Manhumirim, the beginning of Fazenda Cotrim was born; Mario found a love for coffee & began to plant his first seedlings. After a tragic work accident took his life, Mario’s son Sergio inherited Fazenda Cotrim and began to learn more about mountain coffee plantations, flavors, quality, etc. After studying agronomy, he was able to return to the farm his family had started and triple the production levels (while upholding modern processes of manual production). Sergio found a way to balance quality and sustainability, while also testing new production techniques, exploring new specialty flavors, and so forth. Although the mountainous terrain presents many challenges to coffee production, Fazenda Cotrim has found a way to persist & build a business that can continue to be passed down to future generations. Today, their coffee travels by ship to many places in the world (and now also can be found at CYM stores!!!!!!!!!!!!!!!!)
What is our roasting process?
We use a fun liiiiillll’’ machine from Bellwether Coffee to roast! Designed to produce small batch artisan quality, it is compact with a low carbon footprint. You can see it in person at our Old Town shop (1300 King Street, Alexandria, VA).
What is our fave roast?
Jojo’s Medium Roast is our main in-house coffee, and is specifically designed for the drip process. 100% Brazilian beans, on the darker (and delicious) side, chocolate & nutty notes…… Grab a cup in the shop or take some beans home!
